There’s nothing that quite smells like home to me more than a banana bread baking in the oven. There’s something so warm and comforting about the aroma drifting through your house.
If you are like me, you may often buy a bunch of bananas with good intention only for them to over-ripen before you even think of eating one. Banana Loaf is an excellent way to ensure those overripe bananas don’t go to waste.
Since I’m always buying bananas and forgetting about them, I end up making Banana Loaf fairly often.
Banana Loaf is a place to start for beginner bakers as it’s a pretty forgiving recipe. You can substitute ingredients and if you find yourself slightly short on ingredients, it’ll still turn out okay. Though don’t skip on the Bicarbonate of Soda or you’ll find yourself with a rather flat Banana Loaf.
This is a classic comfort food in my house. Something me and my mum would bake together and now something I make in my own home. Banana Loaf recipes are often similar, this is my own recipe which I altered and edited with every bake until I had what I think is the perfect Banana Loaf recipe.
This easy and quick recipe will make a deliciously sweet and moist Banana Loaf every time. Keep reading for the recipe!
Banana Loaf
Ingredients:
- 285g (10oz) Plain Flour
- 1tsp Bicarbonate of Soda
- 1/4tsp Salt
- 110g (4oz) Butter
- 225g (8oz) Caster Sugar
- 2 Large Free Range Eggs
- 3 Ripe Bananas
- 90ml Buttermilk – Alternatively, mix milk with 1.5tsp Lemon Juice
- 1tsp Vanilla Extract
Method:
- Pre-heat oven to 180 Celsius
- Sift Flour, Bicarbonate of Soda and Salt into a large mixing bowl
- Cream Butter and Sugar in a separate bowl until light and fluffy
- Add Eggs, Mashed Bananas, Buttermilk and Vanilla Extract into the Butter mix and mix well.
- Fold into the Flour mix
- Grease Loaf Tins and pour in the mixture
- Put into the oven for approx. 1 hour or until golden-brown
This is the ultimate homely comfort food. Warm from the oven with a little bit of butter is to die for. This is a really low-effort and delicious bake which will always go down a hit.
